Color correcting using the dodge and burn tools
Often I'm faced with a scanned portrait that, after using "Curves" to color correct, looks decent except for some skin tones -- which look too red, flushed, sunburnt, etc. There are other ways to touch this up, like quickmasking that area and making any necessary adjustments, but this way offers more freedom and control, IMO.

Convert your picture to CMYK and open your Channels window. In this case select the Magenta channel and then turn the "eye" back on for CMYK so you still see the composite picture. Now with the Magenta channel selected you can dodge and burn on that channel to get rid of any flush tones in the skin, etc.

Just another way to skin that cat.
